Recipe for our favorite raw fermented kraut
Recipe #1 5 gallons
25# Organic cabbage, 5 large organic onions, 6 organic apples,2 heads organic garlic, 145.25grams salt.
Cabbage, apples onions and garlic are shredded and combined with salt with a kraut pounder in a five-gallon food grade bucket. After contents are mixed and pressed firmly in the bucket, ceramic weights are placed on top of contents to keep contents under “brine”. Ph is checked, recorded and lid is placed on top with air lock. Each week ph is tested and recorded and sauerkraut is checked for quality. After ph has gone below 4.00, kraut is packed into mason jars and labeled and placed in cooler.
